Raw Granola
I make a batch of this whenever I go on a camping trip. The recipe makes about 24 serving - 1/3 cup per serving, which is small but fills you up since it all nuts, seeds, and coconut. This does require a dehydrator, which you can get for under $50 online.
SOAKING THE NUTS & SEEDS:
This granola is loaded with enzymes and antioxidants. I usually soak the nuts and seeds for about 6 hours. Soaking encourages the production of enzymes, which further aid the digestibility and increases nutrition.
ORGANIC CACAO POWDER AND NIBS:
If you choose to make this chocolaty, I recommend using an organic cacao powder for highest nutritional benefit. Cacao is super rich in antioxidants, which aid the defense of pre-mature aging and cancer. Cacao nibs ( found at any health food store) are the most unprocessed form of raw cacao, therefore, they are the most concentrated source of these antioxidants.
INGREDIENTS:
2 cups walnuts
2 cups almonds
2 cups unsweetened coconut shreds
1 cup pecans
1 cup sunflower seeds
1/2 cup chia seeds (use ground chia to avoid chias getting stuck in your teeth)
1/2 cup organic cacao nibs
1 cup honey
1/2 coconut oil
1/2 organic cacao powder (optional)
1 teaspoon vanilla extract
1 teaspoon sea salt
INSTRUCTION:
1 ) Soak the walnuts, pecans, almonds, and sunflower seeds for about 6-8 hours in separate bowls.
2 ) After you’re done soaking, dehydrate all the nuts/seeds overnight (another 6-8 hours)
3 ) Once done drying, chop the nuts (using a food processor.
4 ) Add chopped nuts, seeds, chia, cacao nibs, and coconut shreds to a larger bowl and mix well.
5 ) In a small saucepan over medium heat, combine honey, coconut oil, and cacao powder (optional) - whisking constantly. When the mixture comes together - add vanilla and salt.
6 ) Pour sauce into the bowl with the dry ingredients, stirring until everything is evenly coated.
7 ) Spread mixture onto the dehydrator and dehydrate for 24 hours.
